Quinoa and Kale Salad with Raspberry Vinaigrette
Quinoa Salad, Kale, and Raspberry Vinaigrette are healthy, fresh, easy to make, and full of nutrients.
Ingredients
- 1 cup Fresh Raspberries
- ¼ cup Vinegar
- 1 tbsp Dijon Mustard
- 1 tbsp Honey light
- ¼ cup Olive Oil
- 2 Poached Eggs
- ¼ tsp Himalayan Salt
- ¼ tsp Ground Pepper fresh
- 1½ cup Cooked Quinoa cold
- ¾ cup Kale
- ⅙ cup Goji Berries
Instructions
- Raspberry Vinaigrette:Place raspberries, vinegar, mustard, honey, and olive oil in a blender and puree until smooth. Set aside
- Mix in a bowl: quinoa, kale, and goji berries, add vinaigrette and mix well again
- Divide among two plates, top with poached egg, and sprinkle with one extra tbsp of goji berries
