Ingredients
 

  • 1 cup Fresh Raspberries
  • ¼ cup Vinegar
  • 1 tbsp Dijon Mustard
  • 1 tbsp Honey light
  • ¼ cup Olive Oil
  • 2 Poached Eggs
  • ¼ tsp Himalayan Salt
  • ¼ tsp Ground Pepper fresh
  • cup Cooked Quinoa cold
  • ¾ cup Kale
  • cup Goji Berries

Instructions
 

  • Raspberry Vinaigrette:
    Place raspberries, vinegar, mustard, honey, and olive oil in a blender and puree until smooth. Set aside
  • Mix in a bowl: quinoa, kale, and goji berries, add vinaigrette and mix well again
  • Divide among two plates, top with poached egg, and sprinkle with one extra tbsp of goji berries
