Healthy Mashed Cauliflower, Healthy Alternative to Mashed Potato
Mashed potatoes are a staple side dish in many American households. However, there is a healthier alternative that can be used as a substitute: mashed cauliflower. Cauliflower is not only tastier than potatoes, but it also has fewer calories and carbohydrates, and more fiber and vitamin C. This vegetable can be used as a healthy alternative to mashed potatoes and tastes almost the same.
Ingredients
- 1 Cauliflower (medium size)
- 1 tsp Garlic Powder
- ½ tbsp Lime Juice
- 1 tbsp Fresh Herbs (chopped)
- ½ can Coconut Milk
Instructions
- Cut the cauliflower and place it in a saucepan; add coconut milk
- Add garlic powder, lime juice, salt and pepper cook until boil, then reduce temperature and simmer until soft.
- Mash the mixture with a potato masher and add herbs. Serve warm as a side dish or appetizer with crackers.

Cauliflower and potatoes are both starchy vegetables, but their appearance, taste, and nutritional value are vastly different. Cauliflower has a low carbohydrate content and a high fiber content, whereas potatoes have a high carbohydrate content but a low fiber content. Cauliflower also has a lot of vitamin C and potassium, whereas potatoes include a lot of vitamin B6, magnesium, iron, and copper. Both vegetables are nutritious additions to any meal; however, cauliflower is better suited for people who have diabetes or want to lose weight.
