Vegan Grilled Polenta
Polenta is a dish that is made out of cornmeal. It is often boiled in water or milk and then combined with other ingredients, such as vegetables or cheese. It can be served either creamy or firm, depending on the amount of water or milk that was used. Polenta is a very versatile dish that can be served sweet, savory, creamy, or even fried. We are bringing a vegan grilled option that is an amazing side dish.
Equipment
- Large Sauce Pan
- Electric Grill
Ingredients
- 8 cups Water
- 1 tsp Himalayan Salt
- 2 cups Polenta (cornmeal)
- ⅓ cup Coconut Cream (canned)
- 2 tbsp Coconut Oil (refined)
- 1 cup Vegan Parmesan
- ½ tsp Black Pepper
- 1 tbsp Olive Oil
Instructions
- In a big saucepan, bring water and salt to a boil. In a slow steady flow, stir in the cornmeal. Reduce to a low heat and continue whisking for for 20 minutes, or until the polenta is thick and smooth.
- Keep going to whisk in the coconut cream and oil until well integrated. Take the pan off the heat and stir in vegan Parmesan and black pepper.
- Spread the polenta evenly in a greased 20 by 30 cm shallow baking dish using a spatula.
- Wrap and refrigerate for a few hours.
- The polenta should be cut into squares. Brush both sides with olive oil and place on a hot grill. Grill till golden brown on both sides.
Notes
The polenta was cooked in the fireplace on the stove-top until the 1930s when gas replaced coal. Polenta became popular in the United States in the 1950s when it was served in Italian restaurants.
