Apple, Fennel and Cashew Salad
The crisp apple and fennel salad with cashews is one of the best salads I have ever tasted. The crunchy texture and taste of cashews and apples, combined with the refreshing hint of lemon juice and the freshness of fennel is just out of this world. It is a great recipe for those who just need to take a break from the monotony of their daily diet and try something new and exciting. And if you are looking to impress someone, this salad is just perfect for the occasion. Toppings are optional; roasted chicken breast, shrimp, or salmon is your choice.

Ingredients
- 2 Granny Smith Apples cored and thinly slised
- 3 Celery Stalks thinly sliced
- ⅛ cup Roasted Cashews chopped
- ⅛ cup Dry Apricots chopped
- ⅛ cup Green Olives chopped¼
- ¼ cup Fennel finely chopped
Salad Dressing
- 2 Limes juice
- ¼ cup Extra Virgin Olive Oil
- ½ tsp Himalayan Salt
- ½ tsp Black Pepper
Topping (optional)
- ½ cup Grilled Chicken Breast or shrimps or salmon
Instructions
- In a small bowl prepare the dressing, mixing well lime juice, olive oil, salt, and pepper.
- Prepare the celery by finely slicing it using a mandolin slicer. Cut the apples in half, then in half again to get a triangular shape. Remove the cores from all of the apples and finely slice them all on the mandolin slicer. On a mandolin, thinly slice the celery until it is crisp. A big mixing basin is ideal for combining the fennel, apple, and celery.
- Gently mix the salad with the dressing until everything is well coated. The roasted cashews, olives, and apricots should be added only before serving.
- Serve with grilled chicken, shrimps, or slamon as an option.
Notes
Cashew nuts and green apples, two edgy ingredients, are an interesting combination. Together with fennel, they make a fresh and tangy salad with a sweet crunch. I love the way this salad taste and it’s so easy to make. Be free to play with toppings, shrimps are match great with fennel too.
Apples intend to brown, therefore avoid preparing the salad in advance.
