Avocado and Spinach Burrito
Avocado Burrito with Sour Cream and Spinach is a tasty, quick and easy lunch or supper meal. It's full of delicious flavors and health benefits, and it's ready in less than 15 minutes. Excellent for both children and adults.
Ingredients
- 300 grams Red Bell Peppers diced
- 300 grams Green Bell Peppers diced
- 300 grams Red Onion choped
- ½ cup Refined Coconut Oil
- 4 Eggs
- 1 tsp Rock Salt
- 300 grams Cashew Nuts Cream Cheese
- 300 grams Spinach
- 4 Avocados ripe
- ⅙ cup Lime Juice
- 12 Flour Tortillas
Instructions
- Sauté bell pepper, spinach, and onion in coconut oil until soft, about 5 minutes; put on the side.
- Beat eggs with salt; put on the side.
- Cut avocado in 0.5cm dice; toss gently with lemon juice; put on the side.
- Heat tortilla. In a small frying pan, heat 1/2 tablespoon coconut oil. Pour the eggs into the pan. Add the reserved bell pepper, spinach and onion mixture, and avocado. Stir gently over medium-low heat for about 2 minutes, or until soft curds develop. Spread the egg mixture down the middle of the warmed tortilla; top with cream cheese. Fold in the top and bottom, then roll up from the side.
