Ingredients
 

  • 300 grams Red Bell Peppers diced
  • 300 grams Green Bell Peppers diced
  • 300 grams Red Onion choped
  • ½ cup Refined Coconut Oil
  • 4 Eggs
  • 1 tsp Rock Salt
  • 300 grams Cashew Nuts Cream Cheese
  • 300 grams Spinach
  • 4 Avocados ripe
  • cup Lime Juice
  • 12 Flour Tortillas

Instructions
 

  • Sauté bell pepper, spinach, and onion in coconut oil until soft, about 5 minutes; put on the side.
  • Beat eggs with salt; put on the side.
  • Cut avocado in 0.5cm dice; toss gently with lemon juice; put on the side.
  • Heat tortilla. In a small frying pan, heat 1/2 tablespoon coconut oil. Pour the eggs into the pan. Add the reserved bell pepper, spinach and onion mixture, and avocado. Stir gently over medium-low heat for about 2 minutes, or until soft curds develop. Spread the egg mixture down the middle of the warmed tortilla; top with cream cheese. Fold in the top and bottom, then roll up from the side.
