Baby Spinach Salad With Strawberries and Green Apple
Baby spinach is a delicate green that has a mild flavor and a soft, tender texture. It’s perfect for salads because it doesn’t wilt or break down as easily as other greens. The dry strawberries and crunchy green apple in this salad add a sweet and sour note, while the candied pecans add a nice crunchy texture. The dressing is made with olive oil, balsamic vinegar, and Dijon mustard for a slightly acidic finish.
Ingredients
Salad
- 6 cups Baby Spinach baby swiss chard is amazing too
- 1 cup Candied Pecans walnuts are ok too
- 2 com Granny Smith Apples
- 1 cup Dry Strawberries
- ¼ cup Vegan Feta Cheese optional
Dressing
- ¼ cup Virgin Olive Oil
- ¼ cup Honey
- 2 tbsp Balsamic Vinegar
- 1 tbsp Dijon Mustard
- ½ tsp Himalayan Black Salt
- ½ tsp Black Pepper
Instructions
- Combine the spinach, candied pecans, diced Granny Smith apples, and dried strawberries in a large mixing bowl.
- Make the salad dressing in a separate small bowl by whisking or stirring together the honey, olive oil, balsamic vinegar, dijon mustard, salt, and pepper.
- Dress the salad with the salad dressing. Stir everything together and serve right away. Optionally sprinkle with feta cheese crumbles
