The dry strawberries and crunchy green apple in this salad add a sweet and sour note, while the candied pecans add a nice crunchy texture. The dressing is made with olive oil, balsamic vinegar, and Dijon mustard for a slightly acidic finish.

Ingredients
 

Salad

  • 6 cups Baby Spinach baby swiss chard is amazing too
  • 1 cup Candied Pecans walnuts are ok too
  • 2 com Granny Smith Apples
  • 1 cup Dry Strawberries
  • ¼ cup Vegan Feta Cheese optional

Dressing

  • ¼ cup Virgin Olive Oil
  • ¼ cup Honey
  • 2 tbsp Balsamic Vinegar
  • 1 tbsp Dijon Mustard
  • ½ tsp Himalayan Black Salt
  • ½ tsp Black Pepper

Instructions
 

  • Combine the spinach, candied pecans, diced Granny Smith apples, and dried strawberries in a large mixing bowl.
  • Make the salad dressing in a separate small bowl by whisking or stirring together the honey, olive oil, balsamic vinegar, dijon mustard, salt, and pepper.
  • Dress the salad with the salad dressing. Stir everything together and serve right away. Optionally sprinkle with feta cheese crumbles
