Beetroot Hummus and Vegetable Sandwich
Crisp cucumbers, bell peppers, lettuce, tomato, and carrots, as well as beetroot hummus, make up this nutritious hummus sandwich dish! I like the beetroot hummus and fresh vegetable combo shown below, but feel free to use your favorite hummus and vegetables for a quick and easy lunch. My second favorite combination is avocado hummus and pickled vegetable; avocado hummus is excellent for increasing Omega 3 levels, and pickled vegetables are a good source of probiotics.
Ingredients
- 2 slices Whole-Grain Bread (toasted)
- ¼ cup Beetroot Hummus (green monkey)
- 2 leaves Lettuce
- 4 slices Cucumber
- 3 slices Tomato
- 10 strips Carrot
- 10 strips Bell Peppers
Instructions
- Spread a generous coating of hummus on each slice of toasted bread before assembling your sandwiches. Layer cucumbers on one piece, then lettuce, tomato, carrot, and bell peppers. Place the second slice of bread on top of the vegetable, hummus-side down. Enjoy!
