Grapefruit and Lemongrasss Sake Cocktail
Because the sweetness of citrus varies, feel free to adjust this to your liking by adding extra lemon or grapefruit if the drink is too sweet, or more sugar if you prefer it a little sweeter. If you don't have kafir lime, substitute ordinary lemon juice and adjust the sugar accordingly. If you're making these for a crowd, pulse the ginger, lemongrass, and sugar together in a food processor, then pour it into the citrus juices and sake and chill until ready to serve, then strain through a fine-mesh sieve and into a large serving pitcher.
Ingredients
- 2 tbsp Lemongrass finely chopped
- 1 tbsp Ginger Root finely chopped or minced
- 1 tbsp Muscovado Sugar
- 1 tbsp Kafir Lime Juice
- ½ cup Pink Grapefruit Juice
- 1 cup Sake
Instructions
- Muddle the lemongrass, ginger, and sugar in a measuring pitcher or jar for about 30 seconds, or until the combination is fairly well broken down.
- Add lime juice and muddle for a few seconds longer, then mix in the grapefruit juice and sake.
- Fill a cocktail shaker halfway with ice and strain the mixture through a fine strainer, pressing on the solids to extract all the good stuff.
- Shake the mixture for 10 seconds to chill before straining into two rock glasses half-filled with ice. Garnish with a mint leaf, if desired, and serve.
