Pan Fried Eggplant With Spiced Honey
This recipe for fried eggplant with spiced honey is an alternative to popular tapas in Andalusia. It's a sweet and delicious snack known locally as berenjenas fritas con miel that you must taste at least once! Fortunately, it's simple enough to make at home. If you prefer, you can use ginger or lemongrass spiced honey or dates syrup.
Ingredients
- 3 Asian Eggplants
- 1 tbsp Salt
- 2 tsp Black Pepper
- ⅛ tsp Paprika
- ⅓ cup Flour
- 2 tbsp Olive Oil
- 1 tbsp Ginger Spiced Honey
Instructions
- Cut the eggplant into 0.5 cm thick round slices.
- Sprinkle the salt over the eggplant in a large mixing bowl. Allow about an hour of resting time for the eggplant (this is to draw out any bitterness).
- Season the flour mixture with salt, pepper, and paprika; coat the eggplant slices in it.
- In a deep, heavy pan with some olive oil, fry the slices. Before adding the eggplant, make sure the oil is very hot.
- Drain the eggplant on paper towels after removing it from the pan. Add a pinch of salt to taste. Drizzle with honey that has been spiced with ginger.
