Vegan Cream Cheese Stuffed Roasted Bell Peppers
This recipe for stuffed roasted bell peppers with cream cheese is a wonderful antipasti meal. This is a great treat for a picnic basket. It's a crowd-pleaser and a wonderfully easy dish. For the dairy version, be free to use any cream cheese or sour cream mixed with ricotta cheese.
Ingredients
- 10 halves Roasted Bell Peppers Green Monkey Roasted Bell Peppers
- 200 grams Vegan Cream Cheese Green Monkey Cashew Cream Cheese
- 1 tbsp Olive Oil
- ¼ tsp Dry Thyme
- ¼ tsp Sea Salt
- ¼ tsp Black Pepper
Instructions
- In a bowl, combine cream cheese, olive oil, dry thyme, salt, and pepper and mix well until reach consistency of the soft creamy cheese.
- With tablespoon add one tbsp of cheese mix on half of the pepper, roll carefully, and secure roulade with a toothpick.
- Refrigerate for 2 hours, remove the toothpick before serving, sprinkle with extra dry thyme, and drizzle with chili-infused olive oil.
- Serve with grilled garlic bread.
