Vegan Sandwich with whole grain bread, avocado, and almond butter
A sandwich with whole-grain bread, avocado, and almond butter is a great way to start your day. Whole grain bread is made with all parts of the grain that are ground up into flour, which makes it rich in fiber and antioxidants. Avocado contains monounsaturated fat, which helps lower cholesterol levels. Almond butter contains omega-3 fatty acids, which are important for brain health.
Ingredients
- 1 com Whole-Grain Bread Roll
- 1 tbsp Almond Butter (Green Monkey Saigon)
- ¼ com Avocado
- ½ tsp Olive Oil
- ½ tsp Balsamic Vinegar
- ¼ cup Arugula Salad (as side)
- 8 Slices Tomato
Instructions
- To toast the bread, cut it in half lengthwise and cook it until it is crunchy.
- Spread the almond butter on both pieces of bread and add the ingredients: avocado, tomato, balsamic vinegar, olive oil, and a pinch of salt and pepper on top of the sandwich.
- Serve with arugula salad on the side

You may experiment with other ingredients; almond butter pairs beautifully with sundried tomato pesto, for example.
