Cauliflower and Spinach Detox Soup
This soup is high in immune-boosting and health-promoting elements like vitamin A and C, as well as energizing B vitamins, bone-building vitamin K, and brain and heart-healthy folate. It's also high in fiber, making it a great detox warm meal that you can eat even if you have the flu.
Ingredients
- 600 grams Cauliflower
- 3 cups Vegetable Stock
- 1 tsp Lime Juice
- 2 tbsp Flaxseed ground
- 3 cups Spinach
- 1 tsp Cayenne Pepper
- 1 tsp Black Pepper
- 1½ tbsp Toasted Pine Nuts
- ¼ tsp Olive Oil
Instructions
- Cut the cauliflower into large pieces after removing the core. Bring a big saucepan of water to a boil, then add the cauliflower and continue to cook for around 30 minutes.
- Blend the cauliflower with 2 cups of vegetable stock in a blender until completely smooth. Blend in the remaining ingredients until they are perfectly smooth.
- Serve immediately in the bowls, top with pine nuts and drizzle olive oil
