Cut the cauliflower into large pieces after removing the core. Bring a big saucepan of water to a boil, then add the cauliflower and continue to cook for around 30 minutes.
Blend the cauliflower with 2 cups of vegetable stock in a blender until completely smooth. Blend in the remaining ingredients until they are perfectly smooth.
Serve immediately in the bowls, top with pine nuts and drizzle olive oil
