Notes
Teriyaki is both a cooking method and a sauce from Japan. Teriyaki is a method of cooking meat or fish in a sauce of soy, sake, and mirin, in which the meat or fish is broiled or grilled over an open flame at the end. The soy-based sauce employed in this style of cooking is also referred to as teriyaki. Teriyaki is a Japanese term that refers to both the kind of food and the sauce created from it.
