Sun Dried Tomato Pesto Pasta
Sun-Dried Tomato Pesto Pasta is an excellent meal for a light but nutritious lunch or dinner.! Full of complex tangy flavor that just practically melts in your mouth. And, the little bit of salty Parmesan over the top – it’s awesome.
Ingredients
- 1⅓ cup Pasta Spaghetti
- 1 cup Sun-dried Tomato
- ¼ cup Basil chopped
- ½ tsp Aceto Balsamico
- ¼ tsp Sea Rock Salt
- ½ tsp Ground Black Pepper fresh
- ¼ cup Olive Oil

Instructions
- Cook pasta according to package directions. Once al dente, drain without washing. Ensure to put fresh pasta in boiling water with 1/2 tbsp of salt, without oil.
- While pasta is cooking, in the bowl of a food processor, add tomatoes. Process to a fine paste. Add basil and pulse to combine. Add vinegar, salt, and pepper and pulse to combine. With the machine running, slowly pour in olive oil. Taste for seasoning adding more salt and pepper as necessary.
- Combine sauce and pasta in the pan, cook 2-3 minutes until sauce and pasta are combined well
- Serve on plates and grate Parmesan on top.
