Rosemary, garlic, and pork are a fantastic mix, and when they're combined, we get a delicious pork roast that everyone will enjoy. Pork loin is simple to prepare on a weeknight, but it can also be dressed up for a special event. This is why pork loin is so yummy.
Combine the garlic, salt, pepper, and rosemary in a small bowl. Drizzle the mix and olive oil over the pork loin, rubbed all over the pork, and set aside for 10 minutes. Meat should be room temperature, not cold.
Cook for 45, or until an instant-read thermometer placed into the thickest portion of the pork registers between 66 and 68 degrees.
Place the pork roast on a cutting board, cover with aluminum foil, and set aside for at least 15 minutes before slicing.
Serve with pan-fried baby potatoes and dijon mustard.
